Pasta and vegetable bake.

 This is one of my favourites. It can easily be made vegetarian as well. Great for me as my partner's daughter is a vegetarian.


Pasta and Vegetable Bake

500g pasta– spirals, elbows etc
1 medium sized potato
1 medium sized sweet potato
2 slices of jap pumpkin
1 onion
200g bacon pieces
1 tub Latina carbonara sauce
1 jar dolmio béchamel sauce
Mozzarella cheese– grated
Light tasty cheese– grated


Cook pasta.  Chop vegies into 1-2 cm cubes. Cook in a small amount of olive oil, after 3-4 mins add bacon pieces. Cook for   another 5 minutes, turn heat off and cover.
Mix sauces, pasta, vegies, and a handful of mozzarella cheese
together.
 Place pasta mix in oven proof dish, top with tasty cheese and a small amount of mozzarella. Cook in 180 degree oven for 45 mins, or until cheese has browned.

My First Blog

This is my first ever time at blogging , but, Hey i thought i'd give it a try.
People often comment on my cooking, and while I'm never going to be a Master chef, or win any prizes, I thought maybe I could share some of my made up "Mummy" recipes with anyone who might like to try them.
Most of my recipes are very flexible and are made up with items that most of us have in the pantry anyway.
The extra things that have to bought are generally going to be budget friendly, I have an army to feed too!

This is one of our family's favourite things to cook, and really, it is so flexible that it feels wrong to call it a recipe. We affectionately call it Chef's Surprise.

You'll need...

500g pasta- any sort you choose.
300g lean mince- leftover mexican mince of bolognaise works great
100g bacon or bacon pieces
1t crushed garlic
1/2 t chilli, more or less to suit.
grated cheese

How to...
Cook the pasta according to packet directions.
Cook or reheat mince, add bacon, garlic and chilli.
Stir until cooked and heated through.
If i'm feeling fancy i put some parsley, basil and oregano in now too.

Add cooked pasta to the pot with some grated cheese, mix to combine, and serve..

I find this meal great for sunday night when i'm tired and the kids are too..
